The evening begins with grilled East Coast oysters in al pastor butter and chorizo empanadas with Oaxaca cheese and serrano aioli, paired with The Dawson’s exclusive Moody Tongue Aperitif Pilsner.
Next, dive into our centerpiece: a slow-roasted heritage pig glazed with mezcal, served with smoked mac & cheese, grilled chili-lime corn, wood-fired carrots, and vibrant Mexican street fruit—matched with the bright and juicy Moody Tongue Juiced Lychee IPA.
End on a decadent note with peach cobbler drizzled in Four Roses bourbon caramel and blueberry ice cream, paired with the bold and indulgent Moody Tongue Caramelized Chocolate Churro Porter.
